Mom's Honey Cake Recipe

Hey guys every year around the holidays my mom always makes her famous honey cake. It’s one of my favorite times of the year. The house always smells like sweet supple honey and the cake is always super spongy. So now I want to share this recipe with you guys so that you can make it at home. Ingredients

  • 8 eggs separated

  • 1 cup of sugar

  • 1 ½ cups of High Gluten Flour

  • ½ cup of honey

  • 2-3 tbls of whiskey

  • ½ tsp of baking powder

  • ½ tsp of baking soda

  • 1 tsp cinnamon

  • ½ cup of oil

  • Stand Mixer

  • 2 loaf pans

  • Wire Rack

Directions

Preheat oven to 350°F.

  1. Separate the eggs.
    Separate the egg whites from the yolks, placing them in separate bowls.

  2. Whip the egg whites.
    Add all of the egg whites to the bowl of a stand mixer. Whip until stiff peaks form.

  3. Add the yolks.
    Once the egg whites have reached stiff peaks, reduce the mixer to low speed. Slowly add the egg yolks one at a time, allowing each to incorporate before adding the next.

  4. Prepare the remaining ingredients.
    In a separate bowl, mix all of the remaining ingredients until fully combined.

  5. Fold the mixtures together.
    Gently fold the combined ingredients into the whipped egg mixture. Do not overmix. The batter should remain light and airy, with as much of the whipped volume intact as possible.

  6. Fill the pans.
    Grease 2 loaf pans and divide the batter evenly between them, filling each pan approximately halfway.

  7. Bake.
    Bake at 350°F for 50–60 minutes, or until a knife inserted into the center comes out clean.

  8. Invert and cool.
    Immediately after removing the cakes from the oven, carefully invert them. Allow them to cool completely on a wire rack.

Slice, serve, and enjoy!
